Simple Blueberry Chia Jam made in the Instant Pot. This homemade jam is free of preservatives and also refined sugar free.

Ingredients

  • 18 oz blueberries (around 3 heaping cups)
  • 1 tablespoon lemon juice (15 ml)
  • 1 tablespoon water (15 ml)
  • 3-4 tablespoons maple syrup (45-60 ml, to taste)
  • 3 tablespoons chia seeds

Method

  1. To the instant pot, add blueberries, lemon juice, water and maple syrup. Stir everything together.
  2. Close the lid and press the manual or pressure cook button. Cook on high pressure for 3 minutes with the pressure valve in the sealing position. Let the pressure release naturally.
  3. Open the pot and mash the blueberries slightly with a masher.
  4. Stir in the chia seeds.
  5. Mix with a whisk. Unplug the instant pot and cover it with a glass lid. Jam will thicken as it cools down. Enjoy with toast, on pancakes and store the jam in the refrigerator.
