Ingredients
- 1 lb sweet potato (I used the Red Garnet variety)
- 1 tablespoon oil (I used olive oil)
- ½ teaspoon harissa spice blend (or smoked paprika)
- ½ teaspoon garlic powder
- ¼ + ⅛ teaspoon salt (or to taste)
- black pepper (freshly cracked, to taste)
Method
- Peel the sweet potatoes and then cut each potato into 1/2 inch rounds. Then cut each round into 1/2 inch cubes using a sharp knife (see pictures above in the post). Try to cut the potatoes in the same size so that they all cook evenly in the air fryer.
- Now, transfer the sweet potato cubes to a bowl and add the olive oil and the seasonings- harissa spice blend, garlic powder, salt and pepper. Toss to combine until the sweet potatoes are well coated with the seasoning.
- Preheat the air fryer according to manufacturers instructions. Then arrange the sweet potatoes in a single layer in the air fryer. You might have to do this in batches if you have a small air fryer.
- Air fry at 400 F degrees for 10 minutes shaking the sweet potatoes once in between. Since every air fryer is different, the timing may vary a little, keep an eye after the 8 minute mark.
- Remove in a plate and enjoy as a snack or add to your favorite wraps, tacos, salads and more!
