Ingredients

For Broccoli Paneer Bhurji:

  • 1 cup crumbled paneer (cottage cheese) ((100 grams))
  • 1 cup broccoli (finely chopped)
  • 1 medium onion (finely chopped)
  • 1 large tomato (finely chopped)
  • 1 green chilli (finely chopped)
  • 1 teaspoon ginger garlic paste (or minced)
  • 1/2 teaspoon cumin seeds (jeera)
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon kashmiri red chilli powder
  • 1 teaspoon garam masala
  • salt (to taste)
  • 1 tablespoon coriander leaves
  • 1 tablespoon lemon juice
  • 1.5 tablespoon oil

For Sandwich:

  • 6 bread slices
  • 2 tablespoon butter

Method

For Broccoli Paneer Bhurji:

  1. Heat oil in a pan. Add the jeera (cumin) seeds and let them splutter.
  2. Add the ginger-garlic paste and green chilies and fry for a minute. Next, add the onions and saute till they are soft and transparent.
  3. Next add the finely chopped tomatoes, salt, turmeric powder, coriander powder, and garam masala and mix well. Cook until tomatoes are soft and mushy.
  4. Add the chopped broccoli and cook covered for 1-2 minutes till they are tender.
  5. Then add crumbled paneer and cook for 1-2 minutes.
  6. Finally, add lime juice and garnish with coriander leaves and switch off the flame.
  7. Broccoli Paneer bhurji is ready.

For Broccoli Paneer Bhurji Sandwich:

  1. Take bread slices, apply some butter, and spread two tablespoons of broccoli paneer bhurji mixture on one bread slice. Cover this bread with another slice of bread.
  2. Heat Tawa on a medium flame, add some butter and place the sandwich.
  3. Apply some butter on the bread and toast until the sandwich becomes golden brown on both sides.
