Ingredients

for uttapam batter:

  • 3 cups rice (sona masuri / dosa rice)
  • 1 cup urad dal
  • ½ tsp methi / fenugreek seeds
  • 1 cup thin poha / avalakki / beaten rice
  • salt to taste
  • water for soaking

for toppings:

  • 1 medium sized onion (finely chopped)
  • 1 medium sized tomato (finely chopped)
  • ½ capsicum (finely chopped)
  • 1 carrot (grated)
  • few curry leaves (roughly chopped)
  • 3 tbsp coriander leaves (finely chopped)
  • 1 green chili (finely chopped)
  • salt to taste

Method

  1. firstly, in a large bowl, soak 3 cups of rice and methi seeds for atleast 5 hours.
  2. furthermore, soak urad dal for 3 hours.
  3. transfer the soaked urad dal into blender and blend to smooth and fluffy batter.
  4. collect it into a large bowl and keep aside.
  5. further, blend the soaked rice along with poha adding water if required.
  6. transfer to the bowl of urad dal batter.
  7. mix well making sure the batter has combined completely.
  8. also clean the sides with your hand.
  9. cover and ferment in a warm place for 8- 12 hours.
  10. and add salt to the batter and mix well.
  11. furthermore, heat griddle and pour a ladleful of the batter on it and spread it in a circular thick motion.
  12. then spread the prepared vegetable mixture on the surface of the dosa.
  13. also add oil, if preferred.
  14. furthermore, cover it with a lid and cook on medium flame.
  15. let it fry until the base of the dosa turns golden brown.
  16. finally, serve veg uttapam immediately with coconut chutney and sambar.
