Easy Mix Veg Paratha Recipe | Dhaba-Style Mix Vegetable Paratha

Ingredients
For mix veg stuffing:
- 2 tbsp oil
- 1 tsp cumin
- pinch hing
- 2 chilli (finely chopped)
- 1 inch ginger (grated)
- 1 carrot (grated)
- 5 tbsp cauliflower (grated)
- 4 tbsp peas
- 5 beans (finely chopped)
- ½ tsp turmeric
- 1 tsp chilli powder
- ½ tsp cumin powder
- 1 tsp coriander powder
- 1 tsp garam masala
- ½ tsp aamchur
- ½ tsp kala namak
- 1 tsp salt
- 3 boiled potato (mashed)
- 1 cup paneer (grated)
- 2 tbsp coriander (finely chopped)
- 2 tbsp kasuri methi (crushed)
Other ingredients:
- wheat flour dough
- oil or ghee (for roasting)
- butter (for serving)
Method
- Firstly, in a pan, heat 2 tbsp oil, add 1 tsp cumin and a pinch of hing.
- Add 2 chillies, 1 inch of ginger, and sauté well.
- Also add 1 carrot, 5 tbsp cauliflower, 4 tbsp peas, 5 beans and saute well.
- Mash the vegetables, making sure they're cooked uniformly.
- Now add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp cumin powder, 1 tsp coriander powder, 1 tsp garam masala, ½ tsp aamchur, ½ tsp kala namak and 1 tsp salt.
- Sauté on a low flame till the spices turn aromatic.
- Now add 3 boiled potatoes, 1 cup paneer, 2 tbsp coriander and 2 tbsp kasuri methi.
- Mix well, ensuring all the masalas are thoroughly combined. Keep aside.
- Now pinch a ball-sized dough and roll it about 4 inches in diameter.
- Place a ball-sized prepared mix veg stuffing in the centre.
- Take the edge and start pleating, bringing it to the centre.
- Also, join the pleats together and secure tight pinching off excess dough.
- Sprinkle some wheat flour and roll slightly thick.
- On a hot tawa, place the rolled paratha and cook for a minute.
- Furthermore, flip the paratha when the base is partly cooked (after a minute).
- Also, brush oil/ghee and press slightly. Flip again once or twice till both sides are cooked properly.
- Finally, serve hot Mix Veg Paratha with sauce, raita or pickle.
