Ingredients

  • 14 to 15 lychee ((litchi))
  • 3 cups water (– at room temperature or chilled, add as required)
  • 1 lemon (– small to medium-sized)
  • 3 to 4 tablespoons raw sugar (or white sugar, add as needed)
  • mint leaves (– for garnish as required, optional)
  • lemon slices (– for garnish, as required, optional)
  • ice cubes (as required, optional)

Method

  1. Remove the leathery skin of the lychee fruits.
  2. Remove the fleshy pulp with a paring knife or with clean fingers and discard the seeds.
  3. In a blender, put all the lychee fruit pulp and make a smooth and fine puree of without adding any water. If needed, you can add in a few tablespoons of water while blending. Tiny unblended bits and pieces are alright in the puree.
  4. In a jar or bowl, add the blended lychee puree, water and sugar.
  5. Halve the lemon and extract the juice from them directly in the jar using a lemon squeezer or press.
  6. Mix and stir until the sugar dissolves.
  7. Pour litchi juice in glasses topped with some ice cubes if you like.
  8. Serve Lychee Juice immediately.
  9. While serving, you can garnish Litchi Juice with few mint leaves or lemon slices.
