Ingredients
- 1 long english cucumber (thinly sliced)
- 1/2 small onion (thinly sliced)
- 1/3 cup sour cream ((or plain Greek yogurt))
- 1 tablespoon fresh dill (chopped (or 1 teaspoon dill weed))
- 2 cloves garlic (minced)
- juice of half lime ((or 1 tablespoon distilled white vinegar))
- salt and black pepper (to taste)
- 1/2 teaspoon sugar ((or stevia), optional)
Method
- Using mandoline or sharp knife thinly slice the cucumbers.
- In a large bowl, whisk together the sour cream, fresh dill, minced garlic, lime juice, salt, sugar, and pepper.
- Then add the sliced cucumber, onion, and toss the salad to combine. Adjust the seasoning at this stage.
- Serve immediately or chill the salad until ready to serve.
