Ingredients

  • 1 cup all purpose flour
  • ¼ cup cocoa powder
  • 1.25 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 cup sugar
  • 1 tsp vanilla extract
  • ½ cup unsalted butter (at room temperature)
  • 1 cup water
  • 1 cup chocolate chips
  • 2 eggs

Method

  1. Preheat oven to 350 F degrees.
  2. Line a muffin pan with liners or use a non-stick muffin tray.
  3. In a medium bowl, sift together all purpose flour, cocoa powder, baking powder, baking soda and salt. Set aside.
  4. Place butter and chocolate chips in a saucepan over medium heat.
  5. Let it melt, and then add a cup of boiling water to it. Stir it together until smooth. Let it cool down.
  6. Using paddle attachment of your stand mixer or using hand mixer, beat the eggs till combined.
  7. Add the sugar gradually and beat till well combined. Also, add in the vanilla.
  8. Slowly start adding in the flour and the cooled chocolate mixture side by side.
  9. Flour and chocolate mixture are added in parts, starting and ending with flour.
  10. Divide the batter evenly in muffin pan.
  11. Bake at 350 F degrees for 15-17 minutes or till a toothpick inserted in the center comes out clean.
