Ingredients
- 1 cup all purpose flour
- ¼ cup cocoa powder
- 1.25 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 cup sugar
- 1 tsp vanilla extract
- ½ cup unsalted butter (at room temperature)
- 1 cup water
- 1 cup chocolate chips
- 2 eggs
Method
- Preheat oven to 350 F degrees.
- Line a muffin pan with liners or use a non-stick muffin tray.
- In a medium bowl, sift together all purpose flour, cocoa powder, baking powder, baking soda and salt. Set aside.
- Place butter and chocolate chips in a saucepan over medium heat.
- Let it melt, and then add a cup of boiling water to it. Stir it together until smooth. Let it cool down.
- Using paddle attachment of your stand mixer or using hand mixer, beat the eggs till combined.
- Add the sugar gradually and beat till well combined. Also, add in the vanilla.
- Slowly start adding in the flour and the cooled chocolate mixture side by side.
- Flour and chocolate mixture are added in parts, starting and ending with flour.
- Divide the batter evenly in muffin pan.
- Bake at 350 F degrees for 15-17 minutes or till a toothpick inserted in the center comes out clean.
