Broccoli Paneer Paratha is a delicious and healthy paratha recipe which makes a wholesome breakfast or lunch, and also a great kids lunch box.

Ingredients

For the Dough:

  • 2 cups whole wheat flour
  • 1/4 teaspoon salt
  • 1 teaspoon oil

For the Broccoli Paneer filling:

  • 1 cup shredded broccoli ((steamed))
  • 1 cup grated paneer ((about 175 grams))
  • 1 teaspoon amchur powder
  • 1/2 teaspoon cumin seeds(jeera) powder
  • 1/2 teaspoon red chilli powder
  • 1 teaspoon garam masala ((or to taste))
  • 1/2 teaspoon chaat masala ((optional))
  • 1 tablespoon coriander leaves (finely chopped)
  • salt (adjust to taste)

Method

  1. Firstly blanch or steam the broccoli florets. Then chop the broccoli finely. You can also chop using the food processor.
  2. Take wheat flour, salt, and oil in a bowl and mix well.
  3. Add water and knead together to make a soft dough. Now apply oil over the dough and let it rest for at least 15 mins.
  4. In a large mixing bowl, add shredded broccoli, grated paneer, amchur powder, cumin seeds, red chili powder, garam masala, chaat masala, coriander leaves and salt. Mix everything well.
  5. Divide the dough into equal portions—dust and roll the dough ball to make a 4-inch circle.
  6. Keep 2-3 tbsp of filling in the circle's center and then bring the ends together.
  7. Dust and roll gently to make a 6-8 inch diameter paratha.
  8. Heat a griddle/tawa. Transfer the paratha to the hot griddle. Cook until brown spots appear on both sides.
  9. Apple oil or ghee and cook until nicely browned.
  10. Serve stuffed broccoli paneer paratha hot with raita and pickle.
