Ingredients

  • 1 avocado (ripe)
  • 1 tablespoon Lemon juice ((adjust to taste))
  • 1 tablespoon extra virgin olive oil ((or avocado oil or flax oil, optional))
  • 1 tablespoon cilantro (or fresh parsley or 1 teaspoon dill)
  • 1 garlic clove (fine chopped or ⅓ teaspoon garlic powder)
  • ¼ teaspoon salt ((adjust to taste))
  • 1 to 2 teaspoons pumpkin seeds (or sunflower seeds (optional))
  • ¼ teaspoon black pepper (crushed (adjust to taste))
  • 4 slices bread (of choice)
  • 1½ tablespoon butter ((adjust as needed))
  • ¼ cup sweet corn kernels ((roasted or boiled, sub with chickpeas or any beans))
  • 2 tablespoons feta (or paneer crumbled (optional))
  • 1 small tomato (ripe and firm, very thinly sliced)
  • cucumber slices (very thinly sliced or ribboned)
  • 1 small carrot (ribboned with a peeler or shredded)
  • pickled onion & jalapenos (as needed)
  • salt and pepper (to taste)

Method

Preparation

  1. Butter your bread slices on both sides and toast them on a pan on a medium heat. While the bread toasts, prepare the rest of the ingredients.
  2. If using cooked chickpeas or beans, mash them gently and keep aside. If using sweet corn, boil & drain or grill them.
  3. Add avocado flesh to a bowl and mash with a fork. Add salt, oil, lemon juice, black pepper, pumpkin or sunflower seeds and chopped cilantro. Mix together and adjust salt and lemon to taste.

How to Make Avocado Sandwich

  1. Spread 1 tablespoon of the prepared avocado mash on each of the 2 slices. Keep these aside to cover the prepared sandwiches at the end. Don't use a lot of spread here.
  2. Spread the rest of the avocado mash on the 2 other slices. Layer the chickpeas/ corn kernels and then the feta/cheese, followed by tomatoes, cucumbers and carrots.
  3. Sprinkle some salt, pepper and place the pickled onions and jalapenos. If you wish put arugula or any micro greens here. Cover the sandwich with the bread slice we set aside.
  4. Serve avocado sandwich immediately.
