Ingredients
- 3 cups watermelon cubes
- 100 grams block of feta cheese (– cut into chunks)
- 1 tablespoon extra virgin olive oil
- 2 tablespoons mint leaves (– chopped)
- 1 to 2 tablespoons green olives (– sliced, optional)
- ¼ teaspoon dried oregano
- ¼ teaspoon crushed black pepper (or ground black pepper)
- 2 pinches salt (– optional, only if needed)
- 2 teaspoons lemon juice (or add according to taste)
- 1 tablespoon mint leaves (– chopped, for garnish)
Method
- Add chopped watermelon to a bowl.
- Add olives and mint and mix lightly.
- Add feta chunks on top.
- Sprinkle oregano, black pepper and salt if needed.
- Drizzle olive oil and lemon juice.
- Mix gently and taste to adjust seasoning.
- Garnish with mint and serve immediately.
