These vegetarian club sandwiches are deliciously stacked with layers of lettuce, stir fried veggies, potato slices and a spread of mayo or cream cheese.

Ingredients

  • 6 slices bread (of choice)
  • 2 tbsps mayonnaise (or cream cheese or Greek yogurt)
  • 1 garlic (medium, chopped)
  • 1 cup cabbage (shredded)
  • ½ to ¾ cup bell peppers (/ capsicum sliced thin)
  • 1 onion (medium, thinly sliced)
  • 1 carrot (medium sized, julienned)
  • 1 tbsp oil
  • ½ tsp black pepper (coarsely crushed)
  • salt (very little)
  • 1 medium tomato (sliced)
  • 4 to 8 lettuce leaves ((use as desired))
  • 1 potato (medium, sliced & boiled)
  • black pepper or any other seasoning (as needed)
  • salt (as needed)

Method

Preparation

  1. Slice potato to ¼ inch thick pieces and boil them until fork tender but not mushy. Drain the water and set aside.
  2. Butter the bread slices and toast until crisp in your preferred way. It can be done on a pan, toaster or air fryer.

Making filling

  1. Heat 1 teaspoon oil in a pan and pan fry the boiled potato slices until crisp on both the sides. Remove these to a plate.
  2. Add garlic and saute for a minute, until aromatic.
  3. Add all the veggies (for filling) except tomatoes. Saute on a high flame for 3 to 4 mins slightly tender yet crunchy. Add pepper and little salt. Avoid adding too much salt since your mayo or cream cheese is already salted.

How to make Vegetarian Club Sandwich

  1. Spread mayo on one inside of all the bread slices. This helps to hold the filling in place.
  2. Place lettuce on one slice, then roasted potatoes, black pepper and pinch of salt (or any other seasoning). Then place the tomatoes.
  3. On the second slice, place lettuce & stir fried veggies. Cover the filling with another slice, (mayo side down)
  4. Secure the vegetarian club sandwich with sandwich picks and slice before serving.
