Steps

  1. Make a soft dough as for chapati to use for the Frankie roti. Leave it aside for 10 – 15 minutes.
  2. Roll the chapati slightly thicker than a normal roti. Put on a hot pan and roast on both sides for 2 seconds. It should not be fully cooked. Keep all the chapatis covered.
  3. For the Frankie patties, grind the ginger, garlic and green chillies to a fine paste. Pulse the peas in a mixer for 2 seconds, and pulse the carrots for 2 seconds in the same way. Finely chop the onions.
  4. Heat oil in a pan. Put in the ginger-garlic-green-chilli paste and onions, and cook until the onions sweat. Add the peas and carrots and cook well over low heat.
  5. Mix all the masalas specified for Frankie thoroughly in a bowl. Add to the cooked pea-and-carrot mixture and cook for some time, then switch off the heat.
  6. Mix in the boiled, mashed potatoes and coriander thoroughly. Roll the mixture into Frankie patties.
  7. Heat a non-stick pan and brush it with some oil. Put in all the patties and cook on both sides.
  8. For the sauce, put tomato ketchup in a bowl and mix in vinegar thoroughly. Have the shredded cabbage and sliced onions ready in a bowl.
  9. To assemble, heat a pan and put the roti on it. Cook both sides well with oil, ghee or butter, without making it crispy, then remove to a plate. Spread sauce over it, add cabbage and onions, place a patty, add some cabbage and onions again, and grate some cheese on top. Roll it up.
  10. Serve the Frankie hot and enjoy.
