Ingredients

  • 100 gms black rice
  • 1 litre full fat milk
  • 2 tbsp sugar or as required
  • 1 tsp Cardamom powder
  • as required Dry fruit of your choice

Steps

  1. Give the black rice a thorough wash 2 to 3 times, followed by a soak for 2 hours. This rice takes a little longer to cook, so using a pressure cooker for up to 4 whistles can save time.
  2. Put the milk in a heavy-bottomed pan and bring it to a boil. Add the soaked black rice, then cook over medium heat for 45 minutes to 1 hour, stirring occasionally.
  3. Once the milk has reduced to half, add the sugar. Boil for a further 5 to 10 minutes or until the rice is properly cooked.
  4. Add the cardamom powder and fried dry fruits to the kheer. Turn off the stove after 1 more minute, then serve the finished kheer hot or cold, as you prefer.
