Indian Style Tofu scramble known as Tofu bhurji is a very tasty and quick vegetarian dish inspired by egg bhurji recipe and prepared using crumbled tofu, onion, tomato, bell pepper and spices.

Ingredients

  • 1 tablespoon oil
  • 1/2 teaspoon cumin (jeera) seeds
  • 1 teaspoon ginger (grated)
  • 2 green chillies (finely chopped)
  • 1 medium onion (finely chopped)
  • 1 medium tomato (finely chopped)
  • 1 cup colored bell pepper (diced)
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon red chilli powder
  • 1/2 teaspoon garam masala powder
  • 1 cup extra firm tofu ((200 grams))
  • salt (to taste)
  • 2 tablespoons cilantro (coriander leaves)
  • 1 teaspoon lime juice

Method

  1. Press tofu with some heavy object for 15-20 minutes. This will drain the excess moisture.
  2. Crumble the tofu gently with your fingers and keep aside.
  3. Heat oil in a pan. Add the jeera(cumin) seeds and let them splutter. Next, add the ginger, green chilies and saute for a few seconds.
  4. Then add the onions and colored bell peppers. Saute for 2-3 minutes till they are soft.
  5. Add the finely chopped tomatoes and dry spices like turmeric powder, red chili powder, salt, and garam masala. Cook for 2-3 minutes till the tomatoes are soft and mushy.
  6. Then add the crumbled tofu, mix well and cook covered on medium low heat for 1-2 minutes.
  7. Finally add lime juice and garnish with coriander leaves and switch off the flame. Tofu bhurji is ready and can be served with roti or use as stuffing for sandwiches.
