Ingredients

For pressure cooking:

  • 2 cup moong sprouts
  • ½ tsp turmeric
  • ½ tsp salt
  • 2 cup water

For curry:

  • 2 tbsp oil
  • 1 bay leaf
  • 1 tsp cumin
  • pinch hing
  • 2 tbsp ginger garlic (chopped)
  • 2 onion (finely chopped)
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • ½ tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp salt
  • 2 tomato (finely chopped)
  • 2 tbsp coriander (finely chopped)

Method

  1. In a pressure cooker, take 2 cups of moong sprouts, ½ tsp turmeric and ½ tsp salt.
  2. Also, add 2 cups of water and pressure cook for a whistle.
  3. Now, in a kadai, heat 2 tbsp oil. Add 1 bay leaf, 1 tsp cumin, and a pinch of hing, and sauté till the spices turn aromatic.
  4. Further, add 2 tbsp of ginger-garlic and sauté well.
  5. Also, add 2 onions and sauté until golden brown.
  6. Keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp cumin powder, 1 tsp coriander powder, 1 tsp garam masala and 1 tsp salt.
  7. Sauté on a low flame till the spices turn aromatic.
  8. Now add 2 tomatoes and cook until the tomatoes turn soft and mushy.
  9. Continue cooking until the oil separates from the sides.
  10. Add cooked sprouts and mix well, adjusting the consistency and salt.
  11. Simmer for 5 minutes, or until the flavours are absorbed well.
  12. Add in 2 tbsp coriander and mix well.
