Ingredients

for wheat dosa:

  • 2 cup spoiled milk
  • 1 cup wheat flour
  • ¼ cup rava / semolina / suji (coarse)
  • ½ tsp salt
  • ½ cup water
  • ½ capsicum (finely chopped)
  • 1 carrot (grated)
  • 2 tbsp coriander (finely chopped)
  • 2 chilli (finely chopped)
  • ¼ tsp turmeric
  • 1 tsp cumin
  • oil (for roasting)

for crispy pakoda:

  • 2 cup spoiled milk
  • 1 cup maida
  • ¼ cup rice flour
  • 1 tsp cumin
  • 2 tbsp onion (finely chopped)
  • 2 tbsp coriander (finely chopped)
  • 2 chilli (finely chopped)
  • ¼ tsp baking soda
  • ½ tsp salt
  • oil (for frying)

for milk peda:

  • 3 cup spoiled milk
  • 1 cup milk powder (unsweetened)
  • ¾ cup condensed milk / milkmaid
  • ¼ tsp cardamom powder
  • ¼ tsp saffron food colour

Method

how to make wheat dosa using spoiled milk:

  1. firstly, in a large bowl take 2 cup of spoiled milk.
  2. add 1 cup wheat flour, ¼ cup rava and ½ tsp salt.
  3. mix well making sure everything is well combined.
  4. further, add ½ cup water, whisk and mix forming a smooth batter.
  5. now add ½ capsicum, 1 carrot, 2 tbsp coriander, 2 chilli, ¼ tsp turmeric and 1 tsp cumin.
  6. mix well combining everything well.
  7. now pour the batter on hot tawa and spread slightly.
  8. spread some oil on top of the dosa, cover and simmer for 1 minute.
  9. flip over and cook both sides.
  10. finally, enjoy wheat dosa with chutney.

how to make crispy pakoda using spoiled milk:

  1. firstly, in a large bowl take 2 cup of spoiled milk.
  2. add 1 cup maida, ¼ cup rice flour and 1 tsp cumin.
  3. also add 2 tbsp onion, 2 tbsp coriander, 2 chilli, ¼ tsp baking soda and ½ tsp salt.
  4. mix well making sure everything is well combined.
  5. further dip hand in water, and drop ball sized batter in hot oil.
  6. fry uniformly, keeping the flame on medium until the pakoda turns golden brown and crisp.
  7. drain off the pakoda to get rid of excess oil.
  8. finally, enjoy crispy pakoda with chutney.

how to make milk peda using spoiled milk:

  1. firstly, strain out 3 cup of spoiled milk to collect paneer from the milk.
  2. transfer the paneer into large kadai and mash smooth keeping the flame on low.
  3. add 1 cup milk powder, ¾ cup condensed and mix well.
  4. cook until the mixture starts to separate the pan.
  5. now add ¼ tsp cardamom powder and ¼ tsp saffron food colour.
  6. mix well until the mixture starts to hold the shape.
  7. cool the mixture slightly, and shape to peda and mark design of your choice.
  8. finally, enjoy milk peda or store in an airtight container for a week in the refrigerator.
