Ingredients
- 1 medium cauliflower head (gobi) (cut into florets (about 3 cups))
- 2 small potatoes (aloo) (cut into ¾ inch pieces (about 1 cup))
- 2-3 tablespoons olive oil
- 1 tablespoon ginger-garlic (minced)
- 1 green chili (slit lengthwise)
- 1 medium onion (sliced, (about ¾-1 cup))
- 1 medium tomato (diced (about ½ cup))
- 1 tablespoon lime juice ((OR 1 teaspoon Amchur powder {Dry mango powder}))
- 2 tablespoons coriander leaves (for garnish)
Spices
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- salt (to taste)
Method
- In a large mixing bowl, add cauliflower, potato, onions, tomato, green chili, minced ginger-garlic, oil, and all spices. Mix everything well.
- Preheat the air fryer to 380 ° F for 3-4 minutes.
- Then spray the air fryer plate with little oil if you desire and then spread the aloo gobi mixture in a single layer (don't over crowd).
- Air fryer at 380 ° F for 12-15 minutes. Shake the basket halfway through.
- Squeeze some lime juice and garnish with coriander leaves. Serve hot.
Oven-Roasted Aloo Gobi
- If you don't have an air fryer at home, you can also make aloo gobi in the oven instead. Preheat the oven to 425°F. Transfer the seasoned aloo gobi mixture to a baking sheet. Spread them evenly in a single layer and cook for about 20-25 minutes, or until the edges are slightly browned and roasted (time may vary based on the size of your veggies). You may have to turn or shake them once halfway through.
