Paneer Bhurji Sandwich is made with a filling of paneer bhurji or savory scrambled paneer. These sandwiches can either be toasted or grilled. Makes for a filling and healthy breakfast when made with whole wheat bread.

Ingredients

  • 200 grams paneer (- crumbled (Indian cottage cheese))
  • 1.5 tablespoons butter (- or use oil or ghee)
  • ⅓ cup onions (- finely chopped or 1 medium-sized)
  • ½ cup tomatoes (finely chopped or 2 medium sized tomatoes)
  • 1 to 2 green chilies (- chopped finely)
  • 2 teaspoons ginger (- finely chopped)
  • ¼ teaspoon turmeric powder
  • ¼ to ½ teaspoon red chili powder
  • ¼ teaspoon garam masala
  • ½ teaspoon cumin seeds
  • 1 to 2 tablespoons coriander leaves (- chopped finely)
  • salt (as per taste)
  • 8 to 10 slices whole wheat bread (or white bread or brown bread)
  • butter (- softened, as required)

Method

Making bhurji

  1. Keep all the ingredients ready for the paneer bhurji recipe.
  2. Crumble the cottage cheese and set aside.
  3. Heat a pan and then add 1.5 tablespoon of butter or oil in it. Let the butter melt or let the oil become hot.
  4. Next add cumin seeds. Sauté cumin seeds on a low heat until they crackle.
  5. Now add the finely chopped ginger. Sauté the ginger for a minute on low heat, until the raw aroma vanishes from the ginger.
  6. Then add the chopped onions and finely chopped green chilies. Sauté until the onions soften and become translucent.
  7. Sprinkle salt as per taste and stir to combine.
  8. Add chopped tomatoes. Stir and sauté for a minute.
  9. Next add turmeric powder, red chili powder and garam masala powder. Mix well.
  10. Saute the tomatoes for 2 to 3 mins, until the tomatoes soften.
  11. Then add the crumbled paneer. Stir and mix thoroughly.
  12. Cook for 1 minute on low heat.
  13. Turn off the heat and add 1 to 2 tablespoons chopped coriander leaves.
  14. Stir all nicely.
  15. Remove the paneer bhurji in a bowl/vessel and place aside. Allow it to cool or become warm at room temperature.

Making paneer bhurji sandwich

  1. Slice the edges of the bread if you prefer. Then spread generous amount of butter to the bread. Applying butter prevents the bread from becoming soggy.
  2. Add a spoonful of paneer bhurji mixture on the buttered bread. Spread the mixture evenly on all sides with the help of a spatula or back of a spoon.
  3. Cover with another slice of bread.
  4. Place the sandwiches in a preheated toaster or grill.
  5. Toast for 2 to 3 mins or until they look golden brown and crisp. Similarly toast/grill the rest of sandwiches.
  6. Slice the sandwiches, apply some butter if you like over them. Serve Paneer Bhurji Sandwich with green chutney or tomato ketchup.
