Ingredients

  • ¼ cup rolled oats ((or any))
  • 1½ cup vegetables (like carrot, peas, corn, beans)
  • 1 tbsp butter (unsalted)
  • 1 tsp garlic (chopped)
  • 1 tsp ginger (chopped, (optional))
  • ¼ to ½ pepper (crushed)
  • ¼ tsp red chili flakes ((use as needed))
  • 1½ to 2 cups stock (/broth/water)
  • ½ tsp herbs (Italian or oregano)
  • Salt (as needed)
  • Lemon juice (as needed (optional))

Method

  1. Add butter to a hot pan. Saute garlic in the melted butter until it smells good.
  2. Add oats and roast for 1 to 2 mins. If using steel cut oats then, roast for about 3 mins.
  3. Add all the veggies and saute for 2 mins. Stir in the liquid and cook until the veggies are tender. Add salt, herbs and pepper to taste.
  4. Serve vegetable oats soup warm. Sprinkle red chili flakes. You can also add some lemon juice before serving.
