Easy Nylon Khaman Dhokla Recipe | Instant Gujarati Nylon Dhokla

Ingredients

  • 2 cup besan / gram flour
  • ¼ tsp turmeric
  • ¼ cup sugar
  • ½ tsp salt
  • 1 cup water
  • 2 tbsp lemon juice
  • 2 tbsp oil
  • 1 tsp eno fruit salt

for tempering:

  • 2 tbsp oil
  • 1 tsp mustard
  • 5 chilli (sliced)
  • few curry leaves
  • pinch hing
  • ½ cup water
  • 2 tbsp sugar
  • ¼ tsp salt

for garnishing:

  • 2 tbsp coriander (chopped)
  • 2 tbsp coconut (grated)

Method

  1. Firstly, in a large bowl take 2 cup besan, ¼ tsp turmeric, ¼ cup sugar and ½ tsp salt.
  2. Mix well making sure everything is well combined.
  3. Now add 1 cup water and mix well using a whisk.
  4. Add water as required and whisk for 5 minutes.
  5. Prepare a fluffy and light batter.
  6. Cover and rest for 15 minutes.
  7. Now add 2 tbsp lemon juice and 2 tbsp oil.
  8. Continue to whisk for 5 more minutes to get a fluffy batter.
  9. Further, add 1 tsp eno fruit salt and 2 tbsp water.
  10. Mix gently until the batter turns frothy.
  11. Transfer the batter immediately to the greased tray.
  12. Place in a steamer and steam for 20 minutes.
  13. Now cut the dhokla into pieces.
  14. To prepare the tempering, heat 2 tbsp oil. Add 1 tsp mustard, 5 chilli, a few curry leaves, pinch hing, and splutter the tempering.
  15. Further add ½ cup water, 2 tbsp sugar, and ¼ tsp salt.
  16. Mix and boil for 2 minutes, making sure everything is well combined.
  17. Pour the tempering over the dhokla and rest for 20 minutes so that the dhokla absorbs all the water.
  18. Before serving, top with 2 tbsp coriander and 2 tbsp coconut.
