Ingredients

for pressure cooking:

  • 1 cup white peas / safed matar (soaked overnight)
  • 2 cup water
  • ½ tsp salt

for jaljeera chutney:

  • handful pudina / mint
  • small piece tamarind / imli
  • 1 pod black cardamom
  • ½ tsp pepper
  • ½ tsp cumin / jeera
  • 1 tsp saunf / fennel
  • ½ tsp chaat masala
  • ½ tsp aamchur / dry mango powder
  • 2 tbsp water
  • ¼ tsp salt

other ingredients:

  • 3 tsp oil
  • ¼ tsp turmeric / haldi
  • ½ tsp kashmiri red chilli powder / lal mirch powder
  • pinch of hing / asafoetida
  • ¼ tsp cumin powder / jeera powder
  • ½ tsp coriander powder
  • 1 inch ginger (finely chopped)
  • ¼ tsp garam masala
  • ½ tsp chaat masala

for garnishing:

  • 2 tbsp onion (finely chopped)
  • 2 tbsp tomato (finely chopped)
  • few coriander leaves (finely chopped)
  • 1 inch ginger (julienne)
  • 1 green chilli (slit)
  • ¼ lemon (wedge)
  • pinch of chaat masala

Method

  1. firstly pressure cook 1 cup white peas, 2 cup water and ½ tsp salt.
  2. now in a kadai heat 3 tsp oil and saute 1 inch ginger.
  3. further saute spices.
  4. additionally add in pressure cooked white peas and mix well.
  5. mash slightly for desired consistency.
  6. now add in prepared jaljeera chutney and mix well.
  7. boil for 5 minutes or more adjusting consistency.
  8. garnish with onion, tomato, coriander leaves, ginger, green chilli, lemon and chaat masala.
  9. finally, serve matar kulcha recipe with plain kulcha or naan.
