Easy Kulcha Recipe | Amritsari Aloo Kulcha - Street Style on Tawa

Ingredients

for dough:

  • 3 cup maida
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 1 tbsp sugar
  • ½ tsp salt
  • ½ cup curd
  • water (for kneading)
  • 2 tbsp ghee

for stuffing:

  • 3 potato (boiled & grated)
  • 1 onion (finely chopped)
  • ½ tsp chilli powder
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • ½ tsp garam masala
  • 1 tsp aamchur
  • ¼ tsp ajwain
  • ½ tsp salt
  • ½ tsp kala namak
  • ½ tsp ginger paste
  • 2 chilli (finely chopped)
  • 2 tbsp coriander (finely chopped)

for rolling:

  • kalonji
  • sesame
  • coriander (finely chopped)
  • chilli powder

Method

Dough kneading for kulcha:

  1. Firstly, in a large bowl take 3 cup maida, ½ tsp baking powder, ¼ tsp baking soda, 1 tbsp sugar and ½ tsp salt. Mix well.
  2. Add ½ cup curd, and water. Start to knead the dough adding water as required.
  3. At first, the dough will be sticky. Keep kneading to make the dough soft and smooth.
  4. Also, add 2 tbsp ghee and continue to knead the dough.
  5. Knead to smooth and soft dough, tuck the dough and rest for 30 minutes.

Aloo stuffing for kulcha:

  1. Firstly, in a large bowl take 3 potato. Make sure to grate the boiled potato, so it will be easy while rolling the kulcha.
  2. Add 1 onion, ½ tsp chilli powder, ½ tsp cumin powder, ½ tsp coriander powder, ½ tsp garam masala, 1 tsp aamchur, ¼ tsp ajwain, ½ tsp salt, ½ tsp kala namak and ½ tsp ginger paste.
  3. Also, add 2 chilli, 2 tbsp coriander and mix well.
  4. Aloo stuffing is ready for preparing kulcha. Keep aside.

Rolling and roasting kulcha on tawa:

  1. Firstly, take the dough and dust with madia.
  2. Stuff a ball sized stuffing into the dough and seal.
  3. Now roll gently keeping it uniform thickness.
  4. Spread some water on top, sprinkle kalonji, sesame, coriander and chilli powder.
  5. Flip over and spread water over kulcha. This helps kulcha to stick on the tawa.
  6. Furthermore, slowly flip the kulcha and put it on hot tawa. Sprinkle salt water, as it helps to stick the kulcha well.
  7. After a minute, flip the tawa upside down and cook the kulcha directly on flame till they turn golden brown and puff up.
  8. Gently scrape the kulcha from bottom and remove.
  9. Also brush some butter.
  10. Finally, serve Aloo Kulcha Recipe hot with your favourite curry like chana masala.
