Easy Kulcha Recipe | Amritsari Aloo Kulcha - Street Style on Tawa

Ingredients
for dough:
- 3 cup maida
- ½ tsp baking powder
- ¼ tsp baking soda
- 1 tbsp sugar
- ½ tsp salt
- ½ cup curd
- water (for kneading)
- 2 tbsp ghee
for stuffing:
- 3 potato (boiled & grated)
- 1 onion (finely chopped)
- ½ tsp chilli powder
- ½ tsp cumin powder
- ½ tsp coriander powder
- ½ tsp garam masala
- 1 tsp aamchur
- ¼ tsp ajwain
- ½ tsp salt
- ½ tsp kala namak
- ½ tsp ginger paste
- 2 chilli (finely chopped)
- 2 tbsp coriander (finely chopped)
for rolling:
- kalonji
- sesame
- coriander (finely chopped)
- chilli powder
Method
Dough kneading for kulcha:
- Firstly, in a large bowl take 3 cup maida, ½ tsp baking powder, ¼ tsp baking soda, 1 tbsp sugar and ½ tsp salt. Mix well.
- Add ½ cup curd, and water. Start to knead the dough adding water as required.
- At first, the dough will be sticky. Keep kneading to make the dough soft and smooth.
- Also, add 2 tbsp ghee and continue to knead the dough.
- Knead to smooth and soft dough, tuck the dough and rest for 30 minutes.
Aloo stuffing for kulcha:
- Firstly, in a large bowl take 3 potato. Make sure to grate the boiled potato, so it will be easy while rolling the kulcha.
- Add 1 onion, ½ tsp chilli powder, ½ tsp cumin powder, ½ tsp coriander powder, ½ tsp garam masala, 1 tsp aamchur, ¼ tsp ajwain, ½ tsp salt, ½ tsp kala namak and ½ tsp ginger paste.
- Also, add 2 chilli, 2 tbsp coriander and mix well.
- Aloo stuffing is ready for preparing kulcha. Keep aside.
Rolling and roasting kulcha on tawa:
- Firstly, take the dough and dust with madia.
- Stuff a ball sized stuffing into the dough and seal.
- Now roll gently keeping it uniform thickness.
- Spread some water on top, sprinkle kalonji, sesame, coriander and chilli powder.
- Flip over and spread water over kulcha. This helps kulcha to stick on the tawa.
- Furthermore, slowly flip the kulcha and put it on hot tawa. Sprinkle salt water, as it helps to stick the kulcha well.
- After a minute, flip the tawa upside down and cook the kulcha directly on flame till they turn golden brown and puff up.
- Gently scrape the kulcha from bottom and remove.
- Also brush some butter.
- Finally, serve Aloo Kulcha Recipe hot with your favourite curry like chana masala.
