Keto Poha | Cauliflower Poha is made with cauliflower rice which are a fantastic, low carb, gluten free, nut free, vegetarian keto breakfast dish that can be prepared under 30 minutes.

Ingredients

  • 2 cups cauliflower rice
  • 2 tablespoons peanuts (groundnuts)
  • 1/2 cup cauliflower stocks ((optional))
  • 2 tablespoons ghee (or coconut oil or butter(grass fed is better))
  • 1 teaspoon mustard seeds
  • 2 green chilies (finely chopped)
  • 1 stalk curry leaves
  • 1/2 teaspoon turmeric powder
  • 1 medium onions (finely chopped)
  • salt (to taste)
  • 2 tablespoons cilantro (coriander leaves) (for garnish)
  • 1 teaspoon lime juice

Method

  1. Firstly separate cauliflower into florets and stalks. Wash thoroughly.
  2. Cut the cauliflower stalk into ½ inch cubes to resemble potatoes.
  3. Grate florets with the help of a grater or food processor to resemble fine rice or couscous.
  4. In a large pan, heat 2 tbsp of ghee (alternatively you can use 1 tablespoon coconut oil with 1 tbsp butter instead). Roast the peanuts till you get nice golden brown color and set aside.
  5. In the same frying pan, add mustard seeds once they crackle, add the green chili and curry leaves, and saute for a few seconds.
  6. Next, add in the cauliflower stalks and cook till they are tender.
  7. Add the onions and turmeric, season with some salt, and cook till the onions become soft.
  8. Add in the cauliflower rice, salt, tablespoon of water, and mix well.
  9. Cover with a lid and cook on medium-low heat for 2 to 3 minutes. Stir in between.
  10. Once the cauliflower is cooked, remove from heat and garnish with roasted peanuts, coriander, and lime juice, mix well. Serve hot.
