Ingredients
- 12 to 15 cashews ((kaju), whole)
- 10 to 12 dried figs ((anjeer))
- 2½ cups milk (– chilled)
- 1 to 2 teaspoons raw sugar (or jaggery powder or white sugar, optional)
Method
- Rinse and then soak the cashews and figs in hot water for about 30 to 45 minutes.
- Soaking softens the figs and they are easy to blend. Before blending, check the softness of figs. If they are not softened enough, then you will need to soak for some more time.
- Drain the water and transfer the soaked cashews and figs to a blender. You can also chop the soaked figs and add.
- Pour ½ cup of the chilled milk.
- Blend to a smooth puree. Coarse bits of figs are fine, if you want the chewy texture of figs. Or else just blend till smooth.
- Add the remaining 2 cups of chilled milk and blend again well.
- Check the capacity of your blender jar and add milk accordingly. Note: If the jar is small, then mix the figs-cashews puree and the remaining milk in a bowl or pan.
- If needed, add 1 to 2 teaspoon of raw sugar, white sugar or jaggery powder.
- Pour kaju milkshake in glasses and serve immediately for the best flavor and texture.
