Ingredients

  • ½ english cucumber [around ¼ cup grated cucumber]
  • ¼ cup sour cream
  • ¼ teaspoon dill (dried)
  • salt (to taste)
  • pepper (to taste)
  • water (as required [around 2 tablespoons])

Method

  1. Wash and peel the cucumber and grate it or pulse it in the food processor.
  2. Placed the crushed/grated cucumber in a bowl and add some salt to it. Set aside for 15 minutes, this will help in releasing all the moisture from the cucumber.
  3. After 15 minutes, squeeze the cucumber with your hands, releasing all the moisture. Set aside.
  4. In a bowl combine the cucumber, sour cream, dill, salt & pepper.
  5. Whisk till well combined. Add water, 1 tablespoon at a time till desired consistency is reached. Check the seasoning and adjust to taste.
  6. Chill the dip before serving.
  7. Enjoy the creamy cucumber dip with chips, crackers, veggies!
