Easy Coriander Rice Recipe | Cilantro Rice | Coriander Pulao or Kothamalli Rice

Ingredients

for masala paste:

  • ½ bunch coriander
  • few mint
  • 5 chilli
  • 1 inch ginger
  • 7 cloves garlic
  • 1 inch cinnamon
  • 1 black cardamom
  • 5 pods cardamom
  • 6 cloves
  • ½ tsp pepper

for pulao:

  • 2 tbsp ghee
  • 1 tsp cumin
  • 1 onion (sliced)
  • ½ capsicum (chopped)
  • 1 potato (chopped)
  • 1 carrot (chopped)
  • 5 beans (chopped)
  • 4 tbsp peas
  • 3 cup water
  • 2 tsp salt
  • 1½ cup basmari rice (soaked 20 minutes)
  • 2 tsp lemon juice

Method

  1. Firstly, to prepare the masala paste. In a mixer jar take ½ bunch coriander, few mint, 5 chilli, 1 inch ginger and 7 cloves garlic.
  2. Also add 1 inch cinnamon, 1 black cardamom, 5 pods cardamom, 6 cloves and ½ tsp pepper.
  3. Add water as required and grind to a smooth paste. Keep aside.
  4. In a large kadai, heat 2 tbsp ghee. Add 1 tsp cumin, 1 onion and saute well.
  5. Also add ½ capsicum, 1 potato, 1 carrot, 5 beans, and 4 tbsp peas.
  6. Stir fry till the vegetables turn crunchy.
  7. Further, add prepared masala paste and cook well.
  8. Now add 3 cup water, 2 tsp salt and mix well.
  9. Once the water comes to a boil, add 1½ cup basmati rice, 2 tsp lemon juice and mix well.
  10. Cover and simmer for 20 minutes or until the rice is cooked well.
  11. Fluff the rice gently without breaking the rice grains.
  12. Finally, enjoy Coriander Rice Recipe / Cilantro Rice with raita.
