Easy Coriander Rice Recipe | Cilantro Rice | Coriander Pulao or Kothamalli Rice

Ingredients
for masala paste:
- ½ bunch coriander
- few mint
- 5 chilli
- 1 inch ginger
- 7 cloves garlic
- 1 inch cinnamon
- 1 black cardamom
- 5 pods cardamom
- 6 cloves
- ½ tsp pepper
for pulao:
- 2 tbsp ghee
- 1 tsp cumin
- 1 onion (sliced)
- ½ capsicum (chopped)
- 1 potato (chopped)
- 1 carrot (chopped)
- 5 beans (chopped)
- 4 tbsp peas
- 3 cup water
- 2 tsp salt
- 1½ cup basmari rice (soaked 20 minutes)
- 2 tsp lemon juice
Method
- Firstly, to prepare the masala paste. In a mixer jar take ½ bunch coriander, few mint, 5 chilli, 1 inch ginger and 7 cloves garlic.
- Also add 1 inch cinnamon, 1 black cardamom, 5 pods cardamom, 6 cloves and ½ tsp pepper.
- Add water as required and grind to a smooth paste. Keep aside.
- In a large kadai, heat 2 tbsp ghee. Add 1 tsp cumin, 1 onion and saute well.
- Also add ½ capsicum, 1 potato, 1 carrot, 5 beans, and 4 tbsp peas.
- Stir fry till the vegetables turn crunchy.
- Further, add prepared masala paste and cook well.
- Now add 3 cup water, 2 tsp salt and mix well.
- Once the water comes to a boil, add 1½ cup basmati rice, 2 tsp lemon juice and mix well.
- Cover and simmer for 20 minutes or until the rice is cooked well.
- Fluff the rice gently without breaking the rice grains.
