- Category: Dessert, Ice Cream
- Cuisine: American, Continental
Ingredients
- 14 oz can of coconut milk (I used full fat)
- 3 tablespoons honey
- 4-5 basil leaves
- 1/2 teaspoon Nielsen-Massey Lemon Extract
Method
- To a blender add coconut milk, honey, basil and lemon extract.
- Blend till everything is well combined and mixture looks smooth. You may strain the mixture at this point.
- Pour the mixture into popsicle molds, cover, insert sticks and freeze overnight. In case your mold don't have a slot for sticks, let it freeze a little, for around 2 hours, then take the molds out and insert stick in the center.
- Place popsicle molds under warm water for few minutes and then pull gently for an easy release.
