Ingredients

  • 4 tablespoons chia seeds
  • 2 tablespoons cocoa powder
  • 1 cup light coconut milk (canned (or dairy milk))
  • 2 tablespoons maple syrup ((or honey, agave))

Method

  1. In a mixing bowl, add 1 cup of light coconut milk, 2 tablespoons cocoa powder, 4 tablespoons of chia seeds, and 2 tablespoons of maple syrup, and whisk it together until smooth.
  2. Cover and refrigerate for about 15 minutes. Then, bring it out, give it a quick stir, and refrigerate it for at least 4 hours or overnight. If you find the pudding too thick after chilling, you can thin it out with a little extra milk before serving.
  3. When you are ready to serve, garnish with fresh berries like raspberries and shaved chocolate. Enjoy!
