Chipotle & Maple Roasted Carrots - this is an easy side dish for the holidays! Sweet carrots with a spice kick from chipotle and paprika!

Ingredients
- 1 lb baby carrots
- 2 tablespoons olive oil
- 2 garlic cloves (minced)
- 2 tablespoons maple syrup
- 1/4 teaspoon chipotle powder (or to taste)
- 1/4 teaspoon smoked paprika
- 1/2 teaspoon salt (or to taste)
- 1/8 teaspoon black pepper (or to taste)
- 1 tablespoon sesame seeds (to sprinkle)
- pomegranate arils (to serve)
Method
- Pre heat oven to 450 F degrees. Line a baking sheet with parchment paper and set aside.
- In a small bowl or jar, whisk together olive oil, garlic and maple syrup.
- Add chipotle powder, smoked paprika, salt and black pepper and mix till everything is well combined.
- Toss carrots with the marinade. A good way to do this is to add carrots to a zip lock bag, pour over the marinade and mix till well combined.
- Transfer carrots to a baking sheet (in a single layer) and roast at 450 F degrees for 30-35 minutes or until they are tender and edges are caramelized. Don't forget to stir the carrots every 10 minutes or so.
- Once done, take the carrots out of the oven and sprinkle with sesame seeds. Garnish with pomegranate, cilantro and serve.
