Bread palak vada are crispy and crunchy fritter recipe made with bread crumbs, spinach and few other ingredients great for evening snack.

Ingredients

  • 1.5 cups palak/spinach (finely chopped)
  • 1 cup bread crumbs (appx 3 bread slices)
  • 1/2 teaspoon ginger (finely chopped)
  • 2 green chilies (finely chopped)
  • few pudina/mint leaves (finely chopped)
  • 1/2 teaspoon cumin seeds/jeera
  • 1/2 teaspoon jeera powder
  • 1/2 teaspoon chat masala powder
  • 1/3 cup rice flour
  • 1/4 cup onion
  • few cashew nuts (chopped)
  • lemon juice
  • salt (to taste)
  • oil (for frying)

Method

  1. Grind the bread slices in a mixer grinder to make fresh bread crumbs.
  2. Finely chop spinach, mint, onion, ginger and green chillies.
  3. In a large mixing bowl, add all ingredients and mix well to make a soft dough.(add water as required)
  4. Make a small ball and gently press to flatten.
  5. Keep the oil in a deep frying pan. Make sure the oil hot for frying. Drop the mixture in oil in bunches.
  6. Stir them occasionally.
  7. Fry them till golden brown colour. (appx takes 7-8 minutes)
  8. Serve Bread Palak Vada with masala tea and ketchup.
