Ingredients

ingredients for sambar:

  • ¼ kg fresh / frozen beans (1 inch size chopped)
  • 1 cup of fresh or desiccated coconut
  • ½ cup toor dal (cooked)
  • 1 tbsp jaggery
  • ½ tsp turmeric powder
  • lemon sized tamarind
  • salt to taste
  • few curry leaves

ingredients for masala:

  • 1 tsp oil
  • 1 tbsp coriander seeds
  • ½ tbsp cumin seeds / jeera
  • ½ tbsp urad dal / uddina bele
  • ¼ tsp fenugreek seeds / mente
  • few curry leaves
  • 5 byadgi / kashmiri red chillies

Method

  1. chop all the beans to 1 inch long pieces and keep aside.
  2. wash and pressure cook toor dal with required water till they are completely cooked and soft.
  3. take 1 cup of water and add all chopped beans along with curry leaves.
  4. add a tsp of turmeric powder and mix well. close the lid and allow to cook for 5 min. don't overcook the beans too.
  5. meanwhile, roast cumin seeds, urad dal, coriander seeds and red chillies with a tbsp of coconut oil till you get a nice aroma.
  6. allow it to cool completely. and in a blender take roasted masala, coconut, few curry leaves and tamarind.
  7. blend it to a smooth paste adding required amount of water.
  8. once the beans are cooked add jaggery and salt. bring this to a boil.
  9. now add cooked smashed dal.
  10. also add the ground masala and cook for 10 minutes on a medium flame.
  11. make sure the coconut gets well cooked and the aroma of the sambar rises.
  12. serve hot with steamed rice.
