Ingredients

  • 1 cup rice (cooked / leftover)
  • ¼ cup water
  • 1 cup rice flour
  • salt to taste

Method

  1. firstly, in a blender take 1 cup of cooked rice and ¼ cup water.
  2. blend to smooth paste. transfer the rice paste to mixing bowl.
  3. further add 1 cup rice flour and salt to taste.
  4. combine well and prepare a dough.
  5. knead to smooth and soft dough. add more rice flour or water if required.
  6. pinch out a small ball sized dough and flatten it.
  7. further, pat and flatten with the help of palm and finger.
  8. also dust the work station with little rice flour to prevent roti from sticking while patting.
  9. now pat gently with one hand and the other over side to get round shape. if you are beginner, then roll using rolling pin.
  10. make sure to dust with rice flour if required.
  11. further, with both the hands pat as thin as possible. alternatively use rolling pin.
  12. also dust off excess flour from the roti.
  13. furthermore, put the flattened dough onto the hot tawa.
  14. now spread water over the roti with help of hand or wet cloth removing excess dough.
  15. wait until the water evaporates then flip it to the other side.
  16. press gently and cook all the sides.
  17. finally serve rice roti / akki rotti with ennegai or dry garlic chutney.
