Ingredients
- 1 small butternut squash (about 1.2 pounds) (peeled and cut into 3/4 inch cubes)
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Method
- Peel and cut the butternut squash into 3/4-inch cubes for even and quick cooking.
- Transfer the butternut squash to a bowl. Add olive oil and season with garlic powder, salt, and pepper. Toss them well, so they are all coated with the seasoning.
- Preheat the air fryer to 380 ° F (190°C). Add the seasoned butternut squash to the air fryer basket and spread them in a single layer (cook in batches if required).
- Air fryer them at 380 ° F (190°C) for 16-18 minutes or until slightly brown on the edge and crisp. Shake the basket halfway through. Mine was cooked perfectly in 16 minutes.
- Roasted butternut squash is ready. Remove it in a serving plate and serve it immediately.
Oven Method:
- Preheat the oven to 400°F. Transfer the diced butternut squash to a baking sheet. You can add oil and seasonings to the sheet tray itself. Spread them evenly in a single layer and cook for about 25-30 minutes, or until golden brown around the edges (time may vary based on the size of your cubes). You may have to turn them once halfway through.
