Ingredients

for stir-frying:

  • 1 tbsp butter
  • ½ onion (petals)
  • 10 beans (chopped)
  • ½ carrot (chopped)
  • ½ tomato (sliced & deseed)
  • 3 tbsp peas
  • 5 baby corn (chopped)
  • ½ tsp salt
  • ½ yellow capsicum (sliced)
  • ½ green capsicum (sliced)
  • ½ red capsicum (sliced)

for sabzi:

  • 2 tbsp oil
  • 1 tsp cumin
  • 1 tsp kasuri methi
  • 3 clove garlic (chopped)
  • 1 inch ginger (julienne)
  • 1 chilli (slit)
  • ½ onion (finely chopped)
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • ½ tsp salt
  • 2 tomato (chopped)
  • 2 tbsp tomato sauce
  • ½ tsp garam masala
  • ¼ tsp pepper powder
  • 2 tbsp coriander (finely chopped)

Method

  1. firstly, in a pan heat 1 tbsp butter. add ½ onion, 10 beans, ½ carrot, ½ tomato, 3 tbsp peas and 5 baby corn.
  2. add ½ tsp salt and stir fry on high flame for a minute.
  3. also add ½ yellow capsicum, ½ green capsicum and ½ red capsicum.
  4. stir fry until the vegetables shrink slightly yet remain crunchy. keep aside.
  5. in a large wok, heat 2 tbsp oil. add 1 tsp cumin, 1 tsp kasuri methi, 3 clove garlic, 1 inch ginger and 1 chilli.
  6. saute until the spices turn aromatic.
  7. now add ½ onion and saute until onions turn golden brown.
  8. keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder and ½ tsp salt/
  9. saute on low flame until the spices turn aromatic.
  10. furthermore, add 2 tomato and saute until tomatoes turn mushy.
  11. now add 2 tbsp tomato sauce and mix well forming saucy consistency.
  12. add in sauteed vegetables. along with ½ tsp garam masala and ¼ tsp pepper powder.
  13. mix well keeping the flame on high.
  14. finally, add 2 tbsp coriander and enjoy veg jalfrezi with roti.
