Easy Veg Chowmein Recipe | Vegetable Chow Mein Noodles

Ingredients
For boiling noodles:
- water
- 1 tbsp salt
- 2 pack hakka noodles
- 2 tsp oil
For chowmein:
- 2 tbsp oil
- 2 chilli (finely chopped)
- 1 inch ginger (chopped)
- 5 cloves garlic (chopped)
- 1 onion (sliced)
- 2 tbsp spring onion (chopped)
- 1 carrot (chopped)
- 1 cup cabbage (chopped)
- ½ capsicum (chopped)
- ½ tsp salt
- ½ tsp pepper powder
- 2 tbsp tomato sauce
- 1 tbsp chilli sauce
- 2 tsp soy sauce
- 1 tbsp vinegar
- 2 tbsp spring onion (chopped)
Method
- Firstly, in a large vessel get the water to a boil.
- Add 1 tbsp salt and 2 pack hakka noodles.
- Stir and boil for 3 minutes or until the noodles are cooked al dente.
- Drain off the noodles and make sure the noodles are not overcooked.
- Rinse in cold water to stop from overcooking.
- Transfer the noodles to a large plate and coat them with 2 tsp oil to prevent them from sticking to each other. Keep aside.
- In a large wok, heat 2 tbsp oil. Add 2 chilli, 1 inch ginger and 5 cloves garlic. Stir fry on high flame.
- Add 1 onion, 2 tbsp spring onion and stir fry on high flame.
- Further add 1 carrot, 1 cup cabbage and ½ capsicum.
- Stir fry on high flame till the vegetables turn crunchy.
- Add boiled noodles, ½ tsp salt and ½ tsp pepper powder.
- Also add 2 tbsp tomato sauce, 1 tbsp chilli sauce, 2 tsp soy sauce and 1 tbsp vinegar.
- Toss gently coating all the noodles with sauce.
- Further add 2 tbsp spring onion and stir fry making sure everything is well combined.
- Finally, enjoy Veg Chowmein Noodles with tomato sauce.
