Ingredients
- 3 tbsp oil
- 1 tsp mustard
- ½ tsp cumin
- pinch hing
- 5 cloves garlic (finely chopped)
- 1 inch ginger (grated)
- 2 chilli (finely chopped)
- 1 onion (finely chopped)
- ½ tsp turmeric
- 1 tsp chilli powder
- ½ tsp cumin powder
- 1 tsp coriander powder
- 1 cup tomato puree
- ½ cup curd
- 3 tomato (chopped)
- 1 tsp salt
- 2 cup hot water
- 1 tsp sugar
- 1 cup sev
- 2 tbsp coriander (chopped)
- 2 tbsp kasuri methi (crushed)
- ½ tsp garam masala
Method
- First, heat 3 tbsp oil in a kadai. Add 1 tsp mustard, ½ tsp cumin and pinch hing. Splutter the tempering.
- Add 5 cloves garlic, 1 inch ginger, 2 chilli and saute well.
- Also, add 1 onion and fry till the onions turn golden brown.
- Keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp cumin powder, 1 tsp coriander powder.
- Sauté on a low flame till the spices turn aromatic.
- Add 1 cup tomato puree and cook until the oil separates.
- Keeping the flame on low, add ½ cup curd.
- Cook on a low flame till the curd gets well combined and turns silky smooth.
- Now add 3 tomatoes, 1 tsp salt and mix well. Cook till the tomato softens.
- Add 2 cups of hot water, 1 tsp of sugar, and bring to a boil.
- Just before serving, add 1 cup of sev, 2 tbsp of coriander, 2 tbsp of kasuri methi, and ½ tsp of garam masala. Mix well.
