Ingredients

  • 3 tbsp oil
  • 1 tsp mustard
  • ½ tsp cumin
  • pinch hing
  • 5 cloves garlic (finely chopped)
  • 1 inch ginger (grated)
  • 2 chilli (finely chopped)
  • 1 onion (finely chopped)
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • ½ tsp cumin powder
  • 1 tsp coriander powder
  • 1 cup tomato puree
  • ½ cup curd
  • 3 tomato (chopped)
  • 1 tsp salt
  • 2 cup hot water
  • 1 tsp sugar
  • 1 cup sev
  • 2 tbsp coriander (chopped)
  • 2 tbsp kasuri methi (crushed)
  • ½ tsp garam masala

Method

  1. First, heat 3 tbsp oil in a kadai. Add 1 tsp mustard, ½ tsp cumin and pinch hing. Splutter the tempering.
  2. Add 5 cloves garlic, 1 inch ginger, 2 chilli and saute well.
  3. Also, add 1 onion and fry till the onions turn golden brown.
  4. Keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp cumin powder, 1 tsp coriander powder.
  5. Sauté on a low flame till the spices turn aromatic.
  6. Add 1 cup tomato puree and cook until the oil separates.
  7. Keeping the flame on low, add ½ cup curd.
  8. Cook on a low flame till the curd gets well combined and turns silky smooth.
  9. Now add 3 tomatoes, 1 tsp salt and mix well. Cook till the tomato softens.
  10. Add 2 cups of hot water, 1 tsp of sugar, and bring to a boil.
  11. Just before serving, add 1 cup of sev, 2 tbsp of coriander, 2 tbsp of kasuri methi, and ½ tsp of garam masala. Mix well.
  12. Finally, enjoy Sev Tamatar Recipe with rice, roti or phulka.
