Ingredients
for aloo mixture:
- 3 potato (boiled & mashed)
- ½ tsp mixed herbs
- ½ tsp chilli flakes
- ½ tsp salt
- 2 tbsp corn flour
for pizza mixture:
- ½ onion (finely chopped)
- ½ capsicum (chopped)
- 2 tbsp sweet corn
- 5 olives (chopped)
- 5 jalapeno (chopped)
- ¼ cup pizza sauce
- ½ cup cheese (mozzarella/cheddar)
- ¼ tsp mixed herbs
- ¼ tsp chilli flakes
for slurry:
- 2 tbsp corn flour
- 2 tbsp maida
- ¼ tsp pepper powder
- ¼ tsp salt
- ½ cup water
other ingredients:
- 1 cup panko breadcrumbs
- oil (for frying)
Method
pizza stuffing preparation:
- firstly, in a small bowl take ½ onion, ½ capsicum, 2 tbsp sweet corn, 5 olives and 5 jalapeno.
- add ¼ cup pizza sauce and mix well making sure everything is well combined.
- now add ½ cup cheese, ¼ tsp mixed herbs and ¼ tsp chilli flakes.
- mix well and pizza stuffing is ready. keep aside.
pizza stuffed cutlet preparation:
- firstly, in a large bowl take 3 potato, ½ tsp mixed herbs, ½ tsp chilli flakes and ½ tsp salt.
- also, add 2 tbsp cornflour and mix well forming a dough. corn flour helps to absorb moisture.
- form a soft dough adding more cornflour if required.
- now grease hand with oil and pinch a ball sized mixture.
- flatten slightly and stuff in 2 tbsp prepared pizza stuffing.
- seal tight forming a round ball.
- now flatten slightly, to shape into a cutlet. you can shape the cutlet to your choice. keep aside.
- to prepare the slurry, in a small bowl take 2 tbsp corn flour, 2 tbsp maida, ¼ tsp pepper powder, ¼ tsp salt.
- form a smooth lump free batter adding ½ cup water.
- now dip the prepared cutlet into cornflour slurry.
- add coat with breadcrumbs. you can fry immediately, or freeze and prepare it up to a month.
- shallow fry in hot oil. you can alternatively, pan fry or deep fry.
- flip over and fry both sides until it turns golden brown.
- finally, enjoy pizza cutlet with tomato sauce.
