Ingredients
for the cheesecake batter
- 8 oz cream cheese (at room temperature)
- ½ teaspoon clear vanilla extract
- ½ cup granulated white sugar
- 1 cup heavy cream
- 2-3 tablespoons fanta orange
- drop of orange food color [optional]
Oreo crust/base
- ¾ cup oreo crumbs [from about 10 oreo sandwich cookies]
- 1.5 tablespoons unsalted butter (melted)
Spooky eyes
- 4 oreos
- candy eyeballs
- red food color marker
Method
Make the cheesecake batter
- Beat cream cheese using paddle attachment of your stand mixer or use your hand mixer. Mix till it's smooth.
- Add granulated sugar and vanilla extract and beat till well combined. [Note: I used clear vanilla extract as I didn't want the color of my cream cheese to change, I wanted it to remain as white as possible]
- Divide the cream cheese mixture equally into 2 bowls.
- Add few tablespoons of fanta orange to one of the 2 bowls and mix till well combined. At this point you can add little orange food color if you want your batter to look more orange, this is optional.
- Beat heavy cream using the wire whisk attachment of your stand mixer or using your hand mixer. Remember to chill the bowl and the attachment for 15-20 minutes before beating the cream.
- Once the cream is whipped, divide it into 2 equal parts.
- Fold the whipped cream into the two colored bowls, till well combined. Place these bowl in the refrigerator while your prepare the rest of the stuff.
Make the oreo crust
- Using your food processor crush the oreo cookies into fine crumbs. Add melted butter to it and mix.
- Take your 2 serving glasses (or use 4 small serving glasses) and put half of the prepared oreo mixture (divided equally) at the bottom of the glasses.
- Reserve the remaining oreo crumbs for other layers of the parfait. Place the glasses in the freezer for 15-20 minutes.
Make the spooky oreo eyes
- Twist and open each oreo sandwich cookie.
- On the cream side, place candy eyeball and attach it to the cookie. I used little store bought caramel sauce to stick the eyeball.
- Use your red food marker to draw veins all around the eyeball.
- Repeat till you have 3-4 eyes ready. Set aside.
Arrange the parfait
- Take out the cheesecake mixture from the refrigerator and transfer the white and orange part to 2 different piping bags.
- Take out the chilled glasses from the freezer and put some orange cheesecake batter on top of the oreo cookie crust/base. Then place the white cheesecake batter on top of it.
- Then place the remaining oreo crumbs on top of the white cheesecake batter.
- Repeat all the layers, finishing with white cheesecake batter on top.
- Garnish with more crushed oreo and prepared spooky eyes.
- Chill the no bake oreo cheesecake parfait for 3-4 hours before serving!
