  • cooking spray
  • 2 cups fresh cranberries
  • 1.25 cups white sugar, divided
  • 0.5 cup chopped pecans
  • 1 cup all-purpose flour
  • 0.75 cup unsalted butter, melted
  • 2 large eggs, slightly beaten
  • 1.5 teaspoons almond extract

Steps

  1. Heat the oven to 325 degrees F (165 degrees C) and spray an 8-inch deep-dish pie plate with cooking spray.
  2. Put the cranberries, 1/2 cup sugar and pecans into the prepared pie plate.
  3. With an electric mixer, beat the flour, remaining 3/4 cup sugar, butter, beaten eggs and almond extract in a large bowl until creamy and white. Pour this batter over the cranberry mixture.
