Ingredients

  • 2 cups mixed beans โ€“ equal mix of preferred dried peas and dried beans
  • water as needed

Steps

  1. Pick through the mixed beans and clean them.
  2. Rinse 3 to 4 times in clean water, using a colander or strainer.
  3. In a big bowl, cover the beans with water reaching 2 to 3 inches above them. Soak overnight or for 8 to 9 hours.
  4. The next day, discard all soaking water and rinse with clean filtered water, or water that has been boiled and cooled.
  5. Put the beans in a clean, dry bowl and cover with a lid that is neither too tight nor too loose. Leave undisturbed for 1 to 3 days in a clean, dry place.
  6. Check the next day for visible sprouts. If they are visible and you want longer sprouts, cover again and leave undisturbed.
  7. Do not toss or turn the sprouts; just look and close the bowl with its lid.
  8. Check on the third day. If satisfied with the sprouts, do not leave the bowl undisturbed again; the sprouted beans can be used right away.
