Mix veg paneer paratha
Ingredients
- 3 medium size boiled potatoes
- 1 tsp ginger garlic paste
- 1/2 chopped onion
- 1/2 chopped tomato
- 1/4 chopped red capsicum
- 1/4 chopped yellow capsicum
- 1/2 grated carrot
- 1/2 cup grated paneer
- 3 tsp oil for stuffing
- 1/4 tsp salt for stuffing
- 1 tsp garam masala
- 1/2 tsp aamchur powder
- 1/2 tsp dhaniya jeera powder
- 1/4 tsp jeera
- 2 tsp coriander leaves
- 1/2 bowl wheat flour
- 2 tsp oil for dough
- 1/4 tsp salt for dough
- 1/4 glass of water
- 5-6 tsp rice flour (for dusting)
- 3 tsp butter for roasting
- 1 bowl dry chole for serving
Steps
- Mix all the vegetables together in a mixing bowl and keep them aside. Heat oil in a pan, add cumin seeds, and when they start to crackle, sauté the ginger-garlic paste.
- Then add all the vegetables, boiled potatoes, and paneer. Mix everything well. Add all the spices and gently mix again. Turn off the gas and garnish with fresh coriander.
- Combine all the ingredients for the dough and knead it well. Cover and let it rest for 10 minutes. Then roll out a large roti. Place the stuffing in the centre, seal it from all sides, dust it with rice flour, and gently roll it out again.
- Once the tawa is hot, add butter and cook the paratha until golden and crisp. I have served it dry chole you can serve with curd or green chutney.
