Maple-Ginger Salmon
Ingredients
- 3/4 cup pure maple syrup
- 6 tablespoons lower-sodium soy sauce
- 2 teaspoons grated garlic (from 2 large garlic cloves)
- 2 teaspoons grated ginger (about 1 [1 1/2-inch] piece)
- 4 (6-ounce) skin-on, center-cut salmon fillets (about 1 to 1 1/4 inches thick)
- 2 tablespoons unsalted butter, cut into pieces
- 1 1/2 teaspoons rice vinegar
- 8 ounces mixed summer squash (such as yellow squash and zucchini), sliced into 1/4-inch-thick half-moons
- 8 ounces haricots verts (French green beans)
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- Cooked white rice, for serving
- Sliced scallions, for garnish (optional)
Steps
- Preheat oven to broil with rack about 6 inches from heat. Whisk together maple syrup, soy sauce, garlic, and ginger in a medium bowl until combined. Transfer 3/4 cup syrup mixture to a small saucepan; set aside. Add salmon, skin side up, to remaining 1/2 cup syrup mixture in bowl. Let stand at room temperature 15 minutes.
- Meanwhile, bring maple syrup mixture in saucepan to a simmer over medium-high. Cook, stirring often and adjusting heat as needed to maintain a vigorous simmer, until thickened and syrupy, about 10 minutes. Remove from heat, and stir in butter and vinegar; set aside.
- Place squash and haricots verts on a large rimmed baking sheet; toss with oil, salt, and pepper. Spread vegetables to cover two-thirds of the baking sheet. Remove salmon from marinade, and place skin side down on the empty side of the baking sheet; discard marinade.
- Broil until vegetables are tender and a thermometer inserted into thickest portion of salmon registers 120°F, about 8 minutes, brushing salmon with 2 tablespoons reduced maple syrup mixture during final 2 minutes of broiling. Remove from oven; brush salmon with 1 tablespoon reduced maple syrup mixture.
- Divide cooked white rice, salmon, and vegetables among serving plates. Drizzle with remaining reduced maple syrup mixture, and garnish with scallions, if desired.
