Ingredients
- 2 medium Ataulfo mango (chopped (about 1.5 cups))
- 15 oz black beans (rinsed and drained (about 1.5 cups))
- 1 cup cooked sweet corn ((or frozen, thawed))
- 1 large red bell pepper (chopped)
- 1 large tomato (deseeded and chopped)
- 2 tablespoon red onion (finely chopped)
- 1/2 jalapeno (seeds and ribs removed, then minced)
- 1/4 cup cilantro (finely chopped)
Salad Dressing
- 2 tablespoons extra virgin olive oil
- 1 lime (juiced)
- 1 teaspoon ground cumin

Method
