Ingredients

  • 2 cup Rice Flour, fine
  • 1 cup maida/ plain flour
  • 1 tsp salt
  • 2 tbsp butter, room temperature
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 2 tbsp sesame/ till
  • Pinch hing
  • 1 tsp salt
  • Water, for kneading
  • Oil for frying

Steps

  1. In a large mixing bowl, combine 2 cup rice flour, 1 cup maida and 1 tsp salt. Add ½ tsp turmeric, 1 tsp red chilli powder, 2 tbsp sesame, a pinch of hing and 1 tsp salt, and mix thoroughly. Work in 2 tbsp butter, crumbling and mixing until it is well combined with the flour. Pour in water gradually as you begin kneading; add as much water as needed to make a smooth, soft dough.
  2. Fit the star mould into the chakli maker. Coat the maker with some oil to keep the dough from sticking to the mould. Form the dough into a cylinder and put it inside the maker.
  3. Fasten the lid, then press out small spirals of dough onto a wet cloth or butter paper. Seal each chakli's ends so it does not fall apart during deep frying.
  4. Put the murukku into the hot oil one at a time. Turn them over and fry over medium heat until crisp on both sides.
  5. Let the murukku drain on a paper towel to take up the excess oil.
  6. Allow the chakli to cool, then enjoy them or keep them in an airtight container.
