Ingredients

  • 2 cups almonds
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 3 tablespoons honey
  • 2.5 teaspoons oil (I used canola oil)
  • 2.5 tablespoons water
  • pinch cardamom powder

Method

  1. Measure 2 cups of whole almonds and place them on a baking sheet in a single layer.
  2. Place the baking sheet in an cold oven and then switch it on and set the temperature to 350 F degrees.
  3. Roast the almonds in the oven, stirring them twice in between till they are fragrant and roasted. This will take around 12-15 minutes.
  4. While the almonds are in the oven, combined sugar and salt in a bowl. Set aside.
  5. Meanwhile in a wide pan combine honey, cardamom powder, oil and water and bring it to boil on medium heat.
  6. Take out the almonds from the oven and stir them into the boiling mixture.
  7. Cook till all the liquid is absorbed by the almonds, this takes around 5 minutes.
  8. Remove the almonds from stove top and transfer them into a bowl.
  9. Pour the sugar-salt mixture over the almonds, stir to coat all almonds.
  10. Transfer the almonds to a parchment paper and let them dry completely.
  11. Store in an airtight container.
