Ingredients

  • 1 potato (Boiled & sliced to ¼ inch thickness)
  • 1 small Beetroot (optional, Boiled & sliced)
  • 1 medium onion (sliced thin)
  • 1 large tomato (sliced thin)
  • 1 medium cucumber (sliced thin, peel if required)
  • ¼ Bell pepper (sliced thin, optional)
  • 4 slices bread (white or any)
  • ½ to ¾ teaspoon sandwich masala (or 1 tsp chaat masala + ½ tsp roasted cumin powder)
  • 2 tablespoons butter (softened)
  • 2 cheese slices (optional)

For Sandwich Chutney (or this Green Chutney)

  • 1½ to 2 cups coriander leaves (cilantro)
  • 1 tablespoon roasted gram (or roasted peanuts or ½ white bread slice)
  • 1 to 2 green chilies (adjust to taste)
  • 1 large garlic clove (or 2 small)
  • ½ teaspoon chaat masala
  • ½ teaspoon roasted cumin powder (or roasted seeds)
  • ¼ teaspoon salt
  • 1 to 1 ½ tbsp Lemon juice (optional)

Steps

Preparation

  1. For the optional chutney, put coriander leaves, fried gram, cumin, green chilies, garlic cloves, lemon juice, chaat masala and salt in a blender jar. Blend well with minimal water; about 2 tablespoons was used.
  2. Keep water to a minimum so the chutney is thick and smooth, never runny. Taste it and adjust with more salt or chili if needed.
  3. Pour 1 ½ cups water into a pressure cooker or pot, put a rack inside and set the potatoes on it. Pressure-cook for 2 whistles, or cook in the Instant Pot for 10 mins. Open the lid when the pressure drops, then cool, peel and slice the potatoes.
  4. If including beetroot, pressure-cook it in the same way or cook it in a pot.
  5. Cut the remaining cucumber, onions, tomatoes and bell peppers into slices.

How to Make Veg Grilled Sandwich

  1. Coat both sides of every bread slice with butter, then spread on green chutney as needed.
  2. Layer on potatoes, onions, beets, tomatoes, cucumber and finally capsicum. Give them a generous sprinkling of chaat masala and cumin powder.
  3. If desired, add grated cheese or a cheese slice, then cover with another slice of bread already buttered and spread with chutney.
  4. Set the sandwiches in a hand-held or electric griller and grill until golden. Alternatively, use a grill pan, pressing with a spatula as they grill until golden and crisp.
  5. Cut the grilled vegetable sandwich into halves and serve.
