Ingredients

  • 4 potatoes
  • 3 tbsp fresh green peas
  • 2 green chillies
  • 1 inch ginger
  • Salt as per taste
  • 1/2 tbsp red chilli powder
  • 1/2 tbsp turmeric powder
  • 1 tsp sugar
  • 1 tbsp lemon juice
  • 2 tbsp fresh coriander
  • 1 tbsp oil
  • 1 tbsp mustard and cumin seeds
  • 1/4 tbsp asafoetida
  • 1 bowl rice flour
  • 1 1/2 bowl water
  • 1/2 tsp salt
  • 1/2 tsp Ghee
  • 1 tbsp oil
  • 1/2 tsp mustard seed
  • 1/2 tsp turmeric powder
  • Red chutney as required

Steps

  1. Boil and mash the peas and potatoes. Chop and grate the chillies and ginger.
  2. In a pan, add oil, mustard and cumin seeds and asafoetida and let them splutter. Add chilli, ginger and peas and roast for a minute. Mix in mashed potatoes, salt, chilli powder, turmeric powder, sugar, lemon juice and fresh coriander well.
  3. For the outer layer, put water, salt and ghee in a pan. When the water boils, mix in rice flour. Switch off the gas and let it sizzle for 10 minutes. Then knead well into a smooth dough and divide into equal portions.
  4. Flatten a portion of dough a little, fill with the potato mixture and close. Repeat with the remaining portions. Steam all the pitha for 6-7 minutes and let cool.
  5. For the final tempering, cut the pitha in half. Put oil, mustard seed and turmeric powder in a pan, add the cut pitha to the oil and mix gently. The pitha are ready to serve with red chilli chutney.
