Ingredients

  • 2 tbsp ghee
  • 2 tbsp cashew
  • 2 tbsp raisins
  • 1 tsp cumin
  • 1 bay leaf
  • 1 inch cinnamon
  • 3 pods cardamom
  • 1 tsp pepper
  • 1 tsp cloves
  • ½ onion (sliced)
  • 5 cloves garlic (finely chopped)
  • 1 inch ginger (finely chopped)
  • 2 chilli (slit)
  • 2 cup water
  • 1 tsp salt
  • 1 cup basmati rice (soaked 20 minutes)

Method

  1. Firstly, in a kadai heat 2 tbsp ghee and fry 2 tbsp cashew and 2 tbsp raisins.
  2. Roast them till the cashews turn golden brown. Keep aside.
  3. In the same ghee, add spices and saute till they turn aromatic.
  4. Further add ½ onion, 5 cloves garlic, 1 inch ginger, 2 chilli till the onion softens.
  5. Pour in 2 cup water and 1 tsp salt. Mix and get to a boil.
  6. Add 1 cup basmati rice and mix gently.
  7. Cover and simmer for 20 minutes or until the rice are cooked well.
  8. Fluff the rice gently, and add fried cashew, raisins, and 2 tbsp coriander. Mix gently.
  9. Finally, enjoy Ghee Rice Recipe with curry or dal.
