Ingredients
- 2 tbsp ghee
- 2 tbsp cashew
- 2 tbsp raisins
- 1 tsp cumin
- 1 bay leaf
- 1 inch cinnamon
- 3 pods cardamom
- 1 tsp pepper
- 1 tsp cloves
- ½ onion (sliced)
- 5 cloves garlic (finely chopped)
- 1 inch ginger (finely chopped)
- 2 chilli (slit)
- 2 cup water
- 1 tsp salt
- 1 cup basmati rice (soaked 20 minutes)
Method
- Firstly, in a kadai heat 2 tbsp ghee and fry 2 tbsp cashew and 2 tbsp raisins.
- Roast them till the cashews turn golden brown. Keep aside.
- In the same ghee, add spices and saute till they turn aromatic.
- Further add ½ onion, 5 cloves garlic, 1 inch ginger, 2 chilli till the onion softens.
- Pour in 2 cup water and 1 tsp salt. Mix and get to a boil.
- Add 1 cup basmati rice and mix gently.
- Cover and simmer for 20 minutes or until the rice are cooked well.
- Fluff the rice gently, and add fried cashew, raisins, and 2 tbsp coriander. Mix gently.
- Finally, enjoy Ghee Rice Recipe with curry or dal.
