Ingredients

  • 1 cup shelled edamame (steamed or blanched)
  • 1/4-1/2 cup boiled sweet potato (cubed)
  • 1/4 cup onion (chopped)
  • 1/4 cup tomato (chopped)
  • 1/4 cup cucumber (chopped)
  • 1/4 cup pomegranate seeds
  • 2 tablespoons roasted peanuts
  • 2 teaspoons mint coriander chutney ((or as needed))
  • 1-2 teaspoons sweet tamarind chutney ((or as needed))
  • 1 teaspoon chaat masala
  • 1/4-1/2 teaspoon roasted cumin powder
  • salt, pepper (to taste)
  • 1 tablespoon lemon juice
  • 2-3 tablespoons thin sev
  • 2 tablespoons coriander leaves (chopped)

Method

  1. I used frozen shelled edamame, you can thaw or cook according to the package instructions.
  2. In a large bowl, add edamame, veggies like boiled sweet potato, onion, tomato, cucumber, pomegranate seeds, roasted peanuts, green chutney, sweet tamarind chutney, lemon juice, spices like chaat masala, roasted cumin powder, salt, pepper, sev, and coriander leaves.
  3. Toss everything well. Adjust the seasonings.
  4. Garnish with more sev and serve immediately.
